Paracombe Red Ruby will turn heads. This vintage of rosé is an exciting blend of Malbec and Tempranillo from specialist vineyards in the Adelaide Hills.
The fruit was harvested in separate picks in mid to late March to gain the freshest quality and flavour, balanced with good natural acidity. It was gently pressed to obtain free-run juice and then given time on skins and gently chilled to cold soak. The reward is this wine is soft ruby red colour. The wine then underwent slow, cool ferment in stainless steel before settling and bottling in mid August.
The bouquet has lifted aromas of cherry, strawberry and raspberry making this rosé a refreshing delight. The palate provides delicate yet, intense fruit flavours of red summer berries with gentle hints of soft tannin in a delightful, crisp finish.
