2011 Cabernet Franc
Paracombe Cabernet Franc is one of the rare examples of straight Cabernet Franc produced in Australia. Paul and Kathy Drogemuller were among the pioneers to release their Cab Franc as a straight varietal wine, making it all the more special.
It was back in 1993 after tasting and reviewing barrel samples the Drogemullers first released Paracombe Cabernet Franc. They were impressed with it’s evocative soft fruit, gentle hints of spice and lingering layers of mouth filling flavours. Consistent rains meant extremely low yields for the 2011 vintage.
This wine is made from the original 1983 plantings of Cabernet Franc vines at the family vineyard Paracombe are consistently low yielding. The grapes were carefully harvested in mid April and underwent a slow, cool ferment in small open tanks and were hand plunged to obtain gentle extraction of colours and flavours.
Matured in aged barrels, this vintage has delivered a wine with lifted berry, violets and spicy aromas. The palate provides elegant fruit flavour, aniseed spice, fine tannin and a lingering finish. Enjoy now or will please with cellaring.
