2016 Pinot Noir
As producers of fine Adelaide Hills wine, Paul and Kathy Drogemuller of Paracombe love how Pinot Noir is so perfectly suited to the region. This wine is superb displaying elegance in a fruit driven, medium bodied style.
The Paracombe vineyard is located high on a plateau bathed in glorious morning sunshine to provide good fruit ripening, yet cool climate influence is evident with spice and layered flavours. The fruit for this vintage was harvested from mid to late February from the family vineyard and local, Adelaide Hills vineyards with various clones all adding diversity to this wine. Yields were good and of high quality giving super intense lifted aromas, excellent structure and flavour definition.
The wine was barrel aged for 15 months in French Oak barriques giving subtle influence, development and structure in a balanced style.
Paracombe Pinot Noir will tempt you with lifted aromas of dark cherry, violet flowers strawberry, and toffee notes. Purply crimson in colour, the palate offers definitive Pinot Noir flavours of cherry and plum with a gentle grip of fine tannin and subtle spice on the finish.
